Easy and Crispy Instant Chakli Recipe

Craving something crispy and delicious that you can whip up in no time? My instant chakli recipe is just what you need! This traditional Indian snack, perfect for festive seasons or as a savory treat during tea time, is not only irresistible but also surprisingly simple to make. Here's how you can prepare it using readily available ingredients:

Ingredients:

  • Rice Flour: 2 cups (240 gm)
  • Roasted Chana Dal: 1 cup (100 gm)
  • Wheat Flour: 1/2 cup (70 gm)
  • Poha (Flattened Rice): 1/2 cup (40 gm)
  • Water: 4 cups (800 ml)
  • Oil: 3 tbsp for dough + more for frying
  • Coriander Powder: 1 & 1/2 tbsp.
  • Cumin Powder: 1 tbsp
  • Red Chilli Powder: 2 tbsp
  • Turmeric Powder: 1/2 tbsp
  • Salt: 1 tbsp
  • Ajwain (Carom Seeds): 1/2 tbsp
  • Sesame Seeds: 2 tbsp

Method:

  1. Prepare the Flours:

    • Begin by sieving the rice flour and wheat flour into a large bowl. This ensures your chakli mixture is free from any lumps, giving you a smoother dough.
  2. Grind and Mix:

    • Grind the poha and roasted chana dal to a fine powder. Sieve this mixture to avoid any coarse particles. Mix it well with your sieved flours.
  3. Cooking the Base:

    • In a large saucepan, bring water to a boil. Add the spices, salt, and 3 tablespoons of oil to the boiling water. This spicy water will infuse the flours with flavor as they cook.
    • Gradually add the flour mixture to the boiling water, stirring continuously to prevent lumps. Cook for about 2 minutes, then turn off the heat. Cover the pan with a lid and let the mixture sit for 10 minutes. This resting period allows the flours to absorb all the flavors thoroughly.
  4. Kneading and Shaping:

    • After the resting time, transfer the mixture to a plate and knead it while it's still warm until you get a smooth, pliable dough.
    • Fill your chakli maker with the dough. Press out the chaklis onto a tray in spirals. If you don’t have a chakli maker, a piping bag with a star nozzle can work as a substitute.
  5. Frying:

    • Heat oil in a deep frying pan over medium heat. Fry the shaped chaklis until golden and crispy. Make sure to fry them at a medium heat to ensure they cook thoroughly without burning.
    • Once fried, place the chaklis on tissue paper to absorb excess oil.
  6. Storage:

    • Allow the chaklis to cool completely before storing them in an airtight container. They will keep well for several weeks, retaining their crispness and flavor.

This instant chakli recipe is not only a joy to make but also a hit with everyone who tries it. The spices can be adjusted to suit your taste, making it a versatile snack for any occasion. Serve them at your next gathering, and watch them disappear before your eyes! Happy cooking!
